TASTING NOTES AND PAIRINGS

The Negroamaro I.G.T. Puglia is a structured and intense red wine, obtained from Negroamaro grapes (minimum 85%).

On the nose, it is fine and elegant, with initial notes of blackberry jam evolving into toasted and spicy hints, with coffee and cinnamon.

On the palate, the entry is pleasant, warm, and enveloping. Tannic notes emerge, followed by good persistence and a dry finish.

It pairs perfectly with rich first courses, red meats, game, and aged cheeses.

Alcohol content: 13% vol.

Optimal serving temperature: 16-18°C.

COLOR INTENSE, DEEP RED WITH GARNET REFLECTIONS.
AROMA FINE, ELEGANT AND WARM, WITH NOTES OF BLACKBERRY JAM, TOASTED HINTS AND SPICES, WITH COFFEE AND CINNAMON.
TASTE PLEASANT, WARM AND ENVELOPING, WITH TANNIC NOTES. GOOD PERSISTENCE AND A DRY FINISH, IN BALANCE WITH THE AROMA.

ORIGIN AND GRAPE VARIETY

Produced in Puglia from Negroamaro grapes (minimum 85%), with possible inclusion of other red grape varieties authorized for cultivation in the provinces of the Puglia region. A wine that expresses the identity of its grape variety with aromatic intensity and a clearly recognizable character.

VINIFICATION AND AGING

TRADITIONAL VINIFICATION WITH THREE DAILY PUMP-OVERS DURING THE FIRST WEEK AND ONE PUMP-OVER PER DAY DURING THE FOLLOWING WEEK. FERMENTATION AT CONTROLLED TEMPERATURE BETWEEN 22°C AND 28°C, FOLLOWED BY RACKING AND GENTLE CRUSHING OF THE SKINS. THE WINE IS THEN SUBJECTED TO MALOLACTIC FERMENTATION AND TRANSFERRED TO BOTTLE.
BOTTLING BEGINS FROM MARCH OF THE YEAR FOLLOWING THE HARVEST. IT IS RECOMMENDED TO STORE THE WINE IN COOL, DRY PLACES. AGING POTENTIAL UP TO 3-4 YEARS.
