TASTING NOTES AND PAIRINGS

The Franciacorta D.O.C.G. Pas Dosé is a classic Franciacorta, fresh and fruity, made from Chardonnay grapes and aged on the lees for more than 18 months. An expression of an elegant Zero Dosage wine.

It has a pale yellow color with greenish reflections.

On the nose, it is rich and intense.

On the palate, it is very full-bodied, with a pleasant smoothness, supported by a fine and persistent perlage.

A high-class aperitif, it also pairs perfectly with delicate fish dishes.

Alcohol content: 12.5% vol.

Serving temperature: 6-8°C.

COLOR PALE YELLOW WITH GREENISH REFLECTIONS.
AROMA RICH AND INTENSE.
TASTE VERY BROAD, WITH A PLEASANT SOFTNESS AND A FINE AND PERSISTENT PERLAGE.

ORIGIN AND GRAPE VARIETY

100% Chardonnay grape variety, aged on the lees for over 18 months.

VINIFICATION AND AGING

THE GRAPES, SELECTED FOR RIPENESS AND ACIDITY, ARE GENTLY PRESSED AND FERMENTED IN STAINLESS STEEL TANKS AT A CONTROLLED TEMPERATURE BETWEEN 15 AND 18°C.

THE WINE IS BEST STORED IN DARK AND DRY PLACES AT A TEMPERATURE OF 10-14°C.

THE GRAPES, SELECTED FOR RIPENESS AND ACIDITY, ARE GENTLY PRESSED AND FERMENTED IN STAINLESS STEEL TANKS AT A CONTROLLED TEMPERATURE BETWEEN 15 AND 18°C. THE RESULTING BASE WINE IS THEN SUBJECTED TO A SECOND FERMENTATION USING THE CLASSIC METHOD: AFTER THE ADDITION OF SELECTED YEASTS AND SUGARS, THE SECOND FERMENTATION TAKES PLACE DIRECTLY IN THE BOTTLE. DURING THIS PHASE, THE WINE MATURES IN CONTACT WITH THE LEES, DEVELOPING AROMATIC COMPLEXITY AND FINESSE.

AT THE END OF THE MATURATION PERIOD, REMUAGE AND DISGORGEMENT OPERATIONS ARE CARRIED OUT TO REMOVE THE SPENT YEASTS. THE WINE IS FINALLY BOTTLED WITHOUT THE ADDITION OF DOSAGE, IN PERFECT ACCORDANCE WITH THE PAS DOSÉ STYLE.

THE WINE IS BEST STORED IN DARK AND DRY PLACES AT A TEMPERATURE OF 10-14°C.
