TASTING NOTES AND PAIRINGS

Biferno DOC Rosso Riserva is produced in Molise, between inland hills and the Adriatic coast, from Montepulciano (80%) and Aglianico (20%) grapes. It is an intense wine with a full and complex bouquet, combining structure and elegance.

On the nose, it is intense and ethereal, with broad nuances ranging from spices to vanilla and cinnamon, with well-integrated wood notes.

On the palate, it is robust and enveloping, harmonious and velvety, with delicate tannins and a full, rounded finish. The aftertaste is excellent, with notes of cherry jam, plum, and vanilla nuances.

It pairs perfectly with roasts, red meats, elaborate beef and lamb dishes, braised beef, traditional cured meats, and aged cheeses such as Pecorino.

Alcohol content: 14% vol.
Serving temperature: 16-18°C.

COLOR DEEP AND INTENSE RUBY RED, WITH ELEGANT GARNET REFLECTIONS, BRIGHT AND CONSISTENT IN THE GLASS.
AROMA INTENSE, FULL-BODIED, AND ETHEREAL, WITH NOTES OF SPICES, VANILLA, CINNAMON, AND WELL-INTEGRATED WOOD.
TASTE ROBUST AND ENVELOPING, HARMONIOUS AND VELVETY, WITH DELICATE TANNINS AND A FULL FINISH, SUPPORTED BY GOOD ALCOHOL CONTENT.

ORIGIN AND GRAPE VARIETY

Produced in Molise, from vineyards located in the province of Campobasso, on limestone and clay soils. Biferno takes its name from the river that crosses the region. It is an indigenous wine rediscovered by Rinomata Cantina Tombacco, born from the blend of Montepulciano and Aglianico, grape varieties that express sapidity, structure, and depth.

VINIFICATION AND AGING

VINIFICATION IS CARRIED OUT USING THE TRADITIONAL RED METHOD, WITH DAILY PUMP-OVERS DURING THE FIRST 3-4 DAYS AND EXTENDED PUMP-OVERS AT A CONTROLLED TEMPERATURE OF 25°C UNTIL THE END OF ALCOHOLIC FERMENTATION. THIS IS FOLLOWED BY RACKING AND THE START OF MALOLACTIC FERMENTATION.
ONCE THIS PHASE IS COMPLETED, 2 OR 3 RACKINGS ARE PERFORMED BEFORE MATURATION, PARTLY IN STEEL AND PARTLY IN 500-LITER TONNEAUX FOR A MINIMUM OF 36 MONTHS. AFTER MATURATION, THE CUVÉE IS PREPARED FOR BOTTLING.
STORAGE IN COOL AND DRY CONDITIONS AT 10-12°C IS RECOMMENDED. AGING CAN EXCEED 6 YEARS.
