ORIGIN AND GRAPE VARIETY

Produced from 100% Pecorino grapes, this wine originates in the administrative territory of the province of Chieti. An ancient grape variety from central Italy, rediscovered and enhanced, which finds in these clay and limestone soils a balance between freshness, structure, and identity.

VINIFICATION AND AGING

REDUCTIVE WINEMAKING TECHNIQUES ARE USED, WITH MACERATION FOR ABOUT FOUR HOURS AND GENTLE CRUSHING. AFTER COOLING AND STATIC CLARIFICATION OF THE MUST, FERMENTATION FOLLOWS AT A CONTROLLED TEMPERATURE FOR ABOUT TEN DAYS. THE WINE REMAINS ON THE LEES FOR AN EXTENDED PERIOD, IS RACKED AND PREPARED FOR BOTTLING, WITH A SHORT BOTTLE AGING BEFORE RELEASE. STORAGE IS RECOMMENDED IN A COOL AND DARK PLACE.
