TASTING NOTES AND PAIRINGS

The Pinot Nero I.G.T. Veneto “Sottovoce Collection” is made from 100% Pinot Nero grapes.

Visually, it is vibrant, with a pleasing ruby hue.

On the nose, the aroma is elegant and complex: a perfect blend of red fruit notes (cherry, blackberry, currant) and subtle tertiary notes from oak aging, such as white pepper, vanilla, and cinnamon.

On the palate, it has an excellent attack, full-bodied, slightly acidic, balanced, and persistent, with a light tannic sensation that helps keep the palate clean.

It pairs perfectly with game and roast duck, aged cheeses, pasta dishes with meat sauce, and cured meats. 

Alcohol content: 13% vol.

Optimal serving temperature: 16-18°C.

AROMA ELEGANT AND COMPLEX, WITH NOTES OF RED FRUIT AND TERTIARY HINTS OF WHITE PEPPER, VANILLA, AND CINNAMON.
TASTE WITH AN EXCELLENT ATTACK, FULL-BODIED, SLIGHTLY ACIDIC, BALANCED, AND PERSISTENT, WITH A LIGHT TANNIC SENSATION.

ORIGIN AND GRAPE VARIETY

100% Pinot Nero grape variety, a red grape originally from Burgundy (France), which has also thrived in Italy, particularly in the Northeast.

VINIFICATION AND AGING

AFTER DESTEMMING AND CRUSHING, ALCOHOLIC FERMENTATION BEGINS IN VINIFIERS AT A CONTROLLED TEMPERATURE OF 25°C, WITH SCHEDULED PUMP-OVERS AND DÉLESTAGE EVERY 3 DAYS. AFTER 10 DAYS, RACKING OFF AND CRUSHING OF THE MARC ARE CARRIED OUT. THE WINE IS TRANSFERRED TO STAINLESS STEEL TO ENCOURAGE MALOLACTIC FERMENTATION, FOLLOWED BY RACKING TO CLARIFY THE WINE. IT IS THEN PLACED IN BARRIQUES FOR 6-8 MONTHS. THIS IS FOLLOWED BY BOTTLING AND BOTTLE AGING.
