TASTING NOTES AND PAIRINGS

The Primitivo I.G.T. Puglia is an intense and enveloping red wine, an authentic expression of a warm and fertile land suited to viticulture.

On the nose, it shows excellent aromatic complexity, ranging from plum jam and blackcurrant to spicy notes of pepper and rosemary. Intriguing hints of toasted almond and vanilla are also perceived.

On the palate, it is full, warm, and enveloping, with a good acidic note, savory character, and excellent persistence. The finish reveals spicy and almond notes.

It pairs perfectly with red meats, roasts, game, and aged cheeses.

Alcohol content: 13% vol.

Serving temperature: 16-18°C.

COLOR DEEP PURPLISH RED WITH LIGHT GARNET HUES.
AROMA COMPLEX, RANGING FROM PLUM JAM AND BLACKCURRANT TO NOTES OF BLACK PEPPER AND ROSEMARY, TOASTED ALMOND, AND VANILLA.
TASTE FULL, WARM AND ENVELOPING, WITH A GOOD ACIDIC NOTE, SAVORY AND WITH GOOD PERSISTENCE.

ORIGIN AND GRAPE VARIETY

This wine originates from grapes grown in one of the most suitable areas of Salento, where intense sunlight and proximity to the sea produce rich, concentrated, and harmonious wines, authentic expressions of this land.
Minimum 85% Primitivo, with up to 15% other authorized red grape varieties.

VINIFICATION AND AGING

TRADITIONAL VINIFICATION WITH 3 DAILY PUMP-OVERS DURING THE FIRST WEEK AND ONE PUMP-OVER PER DAY DURING THE FOLLOWING WEEK. AFTER ALCOHOLIC FERMENTATION, RACKING AND GENTLE CRUSHING OF THE SKINS TAKE PLACE. AFTER MALOLACTIC FERMENTATION, STANDARD RACKINGS ARE CARRIED OUT. THE WINE IS BOTTLED IN THE YEAR FOLLOWING THE HARVEST.
